I have some Marvin casement and slider windows to trim out. I’ve trimmed other windows but not ones that already have a sill. I want to add a sill and I want to make sure the way I am doing it is the right way.

Short answer is yes.
What you have are jamb extensions. I might not try to flush up the sill to the bottom extension. A slight reveal should bother no one.
If both sash slide, you have the option of biscuits and clamps so no plugs for screws. Same with the casements.
