I have to put down some 1 inch hex tiles, some call them penny tiles, on the floor of a shower stall. Tiles are on the usual 12×12 mesh mats and will be grouted with non sanded grout. Can anyone offer me some advice on the correct size of notched trowel to spread the thinset. Thanks in advance.

What is the substrate and what type of thin set?

Use a vee-notch trowel, not a square-notch. I'd recommend the smallest one you've got (3/16" max) or you will have excessive thinset squeeze-out into the grout lines.
If you're laying this on a Ditra membrane, you may have to use a slightly bigger notch, but be careful to make the trowel work or you'll be raking thinset out of grout lines for the rest of the summer....

I like 3/16 V notch. And it helps to use the same shade thinset as your grouts gonna be. White or Grey.
