After ripping out the plaster and lath are there any tricks that make truing up the old studs into a uniform plane easier? Doing it by eye, at least by my eye, is not a pretty sight. Thanks !

String lines, levels, and lots of strips of 1/8"-1/4" thick plywood.

A long straight edge, that you can draw down the wall will help you find the worst and best. Continue to use the straight edge to make adjustments. Something 7-8 ft long would be good enough in most cases. If you are trying to straight line a long wall, probably string lines will work best.

sister on the sides with 2x4's. corners first, then pull string, pull stud to string, shoot, done.

Probabely a stupid question, but do the cabinets go right to the cieling? Reason being the horizontal blocking for the cabinet hanging style. Other than that, beautiful.
Full height wall cabinets is the plan and I wanted the blocking to be idiot resistant (me).
I found it easiest to plumb (still love the plumb bob and string) the top and bottom blocking first, square to the corners, then fill in the field using a straight 2x4 as the reference. FWIW there is a 2" difference along that wall between the "highest" and "lowest" studs.
The plumber and electrician both enjoyed their better access. The owner likes the increased insulation vs sistered studs.
Sistering would have been easier and taken less time. But the extra time spent will be more than paid back with less expense for the following steps.

i have heard it said that it is impossible to foolproof because the fools keep improving, i guess we could substitute idiot for fool?
i used to be a member of pile drivers, divers, carpenters, bridge wharf and dock builders local 34 in the bay area, and we were affectionately referred to as "pile butts" i was always trying to "pile butt proof" stuff on my jobs, with limited success.
in most of the pile drivers locals the nickname is "pile buck", 34 is the only one I know of to refer to thmselves as "pile butts". the heritage of pile driving is decsended from loggers, hence the term "bucks" from bucking the logs that will become piles, our term was derived from driving the "pile" to refusal and "butt" cutting to grade. then again we are the san francisco local.
I always tried to stay away from the actual pile driving as much as possible, nasty, noisy, dirty work. i usually worked as a bridgebuilder (setting forms) and as a welder/fabricator doing structural shoring (like the big dig, my specialty actually)
my favorite pilebutt joke is "what happens if you give a pilebutt three steel balls?"

and the third will be in his lunch bucket!
i carried around a three inch diameter steel bearing (from a drilling rig) in my lunch bucket for years after i heard that joke, it is difficult to explain if it does not seem funny, but i thought it was hilarious, guess you had to be there. it all ties in to pilebutt proofing, some things are impossible!

i'm in on doing it this way too. More lumber but sooooo much less time! And it adds strength to the wall at the same time.

The extra 2x works well until you try it on a wall full of plumbing and electrical.. a bit slower and more of a PIT then.

Use KARP's method to true up wall but fir out with light gauge metal studs 3 1/2 inch. That way insulation will work and you can work around plumbing and electric. Staple one side of insulation tape the other. use 7/8 coarse thread zap screws. fast cheap easy.
not mentioned yet is horizontal strapping - often 3/4", sometimes 1.5" - float over short spots, shim, and nail - be aware of where nailing substrate is needed for trim - baseboards and around windows and make sure there wood there -

A good vertical plane laser is great for this. I like to use my "Gizmo". I sister but use 2x3s rather than 2x4s... it gives more room for the plaster keys, wires, etc. The granite measurers have sometimes been amazed to find straight walls when I am finished... I guess they don't see them very often.
