Hi. I recently moved into my brand new home 7 months ago and noticed the ceiling separating from the drywall. It is a 2000 sq foot one level open concept. The builder told me it was just a taping error and they would fix closer to my year date. I’ve spoke. To others and they think it’s more than a taping issue. The builder also said the house is just drying out and settling. It’s very ugly and basically happen around the entire center of house.

My guess would be that something is going on with floor rather than the roof.
What's under the middle of the house, crawlspace, basement?
I've seen main beams shrink and cause problems like this.
Are there trusses that span the entire width of the building? If yes it sure looks like you have Truss up lift. Delt with this on a new home I built 25 years ago and no amount of re-taping will fix it. Sheetrock will need to be cut back and re-installed with correctly to allow it to float.
Do you have any pre-sheetrock photos of these areas?
There are clips that should be nailed to the top of the top plate of the wall that allow the truss to lift off the wall as it contracts and expands. Then the Sheetrock should not be screwed to the bottom of the truss for 2 or 3 feet as it approaches the wall allowing it to float, there are also clip that can be used for this too. Google truss clips.
