Does anyone know what type of ceiling this is? This is a Tudor styled house built in 1989.

If you are referring to the shape it’s considered a vaulted ceiling. If the slope is not on all walls it’s a half vaulted ceiling. If you are referring to the material of ceiling it’s drywall probably. Anything built from 50’s on is a fairly safe bet of being drywall as opposed to plaster.
