Do installers always use two 45 degree cuts to turn a corner or can they just use 45’s on the formed nosing and join the rest at 90 degrees? Yes I am a tightwad. Yes I am concerned about wasting 5 sq ft of material. No I am not particularly concerned that it be the absolute top of the line. (we are talking about moving up from preformed formica to granite)

they would use a swoop mitre. A curved cut from the inside corner of the two pcs, .............(sort of a pair of 45's) that swoops into a 90. So, the one pc goes into the corner, the other is butted to it, with that decorative 45 let in there.
Can't say as I've ever seen a pair of complete 45's in stone. (like you see in post formed lam. counters.

Can you get the long run with sink cutout to the wall at the back of the susan out of the two pcs AND get the extra foot or so of the susan off the drop from one of those? Then you'd only be buying the 15". Depending on the sink location, you might get it out of the sink cutout as well.

It may well be at the fabber's discretion. some will seam at the sink, with two long ears, some will drop in two strips between the full depth pcs, some will get away from the sink. They don't want problems later.
