In renovating the second floor of our ’70s Dutch Colonial, we have installed new pre-hung flat jamb Masonite SafeNSound 2 panel doors throughout, new 3 1/2″ casing, 7″ baseboards, dark bamboo flooring, etc, etc. The solid-core doors along with Baldwin Images egg knobs really have a nice heavy feel to them. Certainly a long way from the cheap stuff we tore out.
I had to shorten the jambs slightly to fit in the existing rough openings and get a consistent door head height throughout. Once the 5/8″ bamboo was installed, the space below the doors ranges from barely clearing the floor to 1/4″ or so. The house has hot water baseboard for heat and forced air floor registers for A/C. There is a return in every room, rather than one central return in the hall, so that is not an issue. I want the undercuts to look consistent from the hall side. I am wondering if there is any “architectural standard” or rule of thumb on undercutting doors?

This has come up before, and people have different preferences. I would go for 1/2" everywhere. Minor settling of the house won't be a problem too quickly. With 1/4" or less it's an invitation to be re-cutting them in the not-too-distant future.
I typically leave an even 1/2" along the bottom.

One consideration is to try to make the bedroom doors as sound proof as you can. If the husband and wife are participating in "bedroom olympics" late at night they don't want to wake the children..^^^^^^"and that's all I've got to say about that"
Husband and wife?? How about... if the son sneaks his girlfriend in there they don't want to be overheard. And they don't want any smoke leaking under the door either.

Yeah, I had another life too. The first one was fun while it lasted, and I have definitely put towels at the door bottom.
Just be sure you cut the bottem of the door
