I,d like to run Wainscotting around the dining room but one wall is out level 2.5″across 12′.I put the moulding up to the wall level behind a 5′ sideboard and it looks awful.I Don’t think propping up the legs on the furniture is the answer. Should I measure off the floor and satisfy the eye.7.5′ ceilings. Thanks.

Why is it so much out of level?
It is difficult to put level stuff in an out of level situation and have it not ne obvious, so you have to adjust. I suppose the easiest thing is to measure up from the floor for a starting point. Run masking tape on the wall where the wainscot goes for a visual test.

1855 Post & Beam. Somebody remodeled house years ago,and sheetrocked base and crown moulding to the crooked out of level plane. Your eye doesn't notice it to bad till you put moulding level across 3' up.
I would think you'd want to prop up the legs of the sideboard to keep stuff from rolling off.

Seems like you need to level the floor or ceiling, have heard of a wall being out of plumb, but never out of level,, just saying...
Old house, corner of foundation has subsided, right? Have you looked into having the foundation jacked?
With a 7.5' ceiling I'm not sure that wainscotting is the right way to go -- will likely make the ceiling seem lower.
