It's not so much the camera for good quality, but lighting. I've been experimenting of late and proper light does so much for not only still photography but video. If you want to get serious and step it up a little a 3 chip camcorder will give you some really crisp colors.
Another factor in getting high quality especially if you want them on the web is the format type to upload. Haven't gotten there yet. But look at this guys video...
Can't find it, but the quality was superb, mainly because of the compression, lighting and file type or something like that. I'll look later.
View ImageView Image I've been using my wife's Flip Video camera with a tripod(super easy to use), and recently purchased a Canon Power Shot SD770 IS, because I'll be able to take stills and videos with it.

I stopped using my DV camcorder and only use my digital camera for taking videos. Mine has a 20 minute limit per clip... but what are you going to really watch that takes more then 20 minutes? I use Panasonic, but they've been hit and miss as far as longevity. Long aftermarket warrantees have been my friend!
The nice thing is the video is already in electronic format, one less step you have to do. You do have less options for microphones with them though.

Thank you all for the responses. I'm very surprised that some videos were shot on your digital cameras , not on some expensive cam -corder.
I see I've got a lot of reseach to do yet.

The Flip video cameras are getting very popular. They come in various resolutions. The youtubers like the 640x480 version. I would want a higher resolution myself.
