What is the difference between the two. Yes,..I know! they are different colors,..but is one stronger than the other. I have been putting up 12 x 12 ceramic tiles on a shower wall with white thinset and was wondering what the difference is,…besides the color> thanks

As far as I know you use the thinset to match the grout and the tile. ie if you want to use white grout and white tiles you better use white thinset or you'll be gouging out a bunch of gray . It can posibly show through where you don't get the grout very thick giving an over all murky appearance.
Sounds like you'll be ok with the white in your case unless your going for a darker color shower surround.

whites for light colored tile and grouts...
grey's the old standard....for everything else.
The white does seem to mix up better/ smoother....smaller granules....
