I am looking for some ideas on how to properly run cement board, tile, and trim around this shower window (see picture). I am also looking for waterproofing suggestions. The showerhead is not pointing directly at the window and the window (all white components) is vinyl.

Run your cement board up to the window. Set tile up to the edge. Return to the window with quarter round or radius bullnose. No trim.

Where do you stop the cement board? At the wood framing or the jamb? And then how do you attach the quarter round?
I didn't make my self clear that I meant tile quarter round. I'd end the cement board at the edge of the window. Set the quarter round in thinset slightly overlapping the edge of the window, but caulk the joint where it meets the window with caulk that matches your grout. Radius bullnose is like a regular field tile with quarter round built into one edge. It would be idea if you can get it to match your tile.
I used PVC trim in a similar situation in my own bathroom, probably 20 years ago. I've had no problem with anything near the window
