We’d like our fascia to match our wood siding so I guess we need to paint it.
Can we still do aluminum soffit or should that be wood too?

You can do whatever you like. The edges will be a little challenging. Aluminum fascia usually is sized to cover the open ends of aluminum soffit pieces. With a mix, you will need to make the fascia wider (taller as installed), and put an additional piece of trim on the inside edge.
making the soffit of wood would work, but you will likely want to install vents (which could otherwise be provided by choosing vented aluminum soffit)
if you paint the fascia, will you also paint the drip edge? Gutters?
You can paint aluminum soffit with proper preparation. The texture will not match, so it would look different than the siding.
One of the benefits of aluminum is the durability of the finish. if you put wood up, it will need to be repainted.
You can get these aluminum trim components in different colors. one if these might be close enough to satisfy your decorating preference.

there are some engineered wood/fiber cement products that would also work and may match the look better
