I’m located in the Northeast and am building a 16’x32′ workshop. The floor joists are 2×10 PT 12″OC supported by piers at grade level. I’d like to lay Advantech for a subfloor and was wondering whether there was any advantage/disadvantage to laying a poly moisture barrier across the floor joists prior to installing the subfloor? I may eventually heat it with a woodstove. Any thoughts about Advantech v. T&G plywood? Thanks.

Forget the polyplastic.
The Advantech is great at moisture resistance by itself. Glueing it down will increase the strength of your floor but poly would stop you from incorporating this important step and force you to rely on nails only.
